basking in the sun, this snickerdoodle cupcake does not appear to have spotted me coming up behind it. i resolve to sneak closer, careful not to make any loud noises that might startle the little pastry, as it is well known for being shy and skittish.

(secret of the snickerdoodle:

take your favorite vanilla cupcake recipe (i decided to use a modified pound cake formula that gave me a crisp cookie-like top above a moist, dense crumb) and add 3/4 tsp. ground cinnamon per dozen cupcakes. top with a sprinkle of demerara (or turbinado) sugar and a light puff of cinnamon before they go in the oven, then bake as usual.

let cool completely, top with a swirl of caramel buttercream and/or a drizzle of homemade caramel sauce, and finish with a touch more demerara (or turbinado) sugar.
