things which have made me happy today:
- making just over $100 at work after tipouts. technically this happened yesterday, but shh. I'm still happy. and I know, it's not epic good money, but it's a lot better than I've been squeezing out of the joint lately. obviously I need to work more doubles and more closing shifts.
- the Merlin soundtrack. makes me smile like an IDIOT. as I keep saying, it's been a long time since I've fallen this hard for a show. (ps
tya_rc I KNOW I STILL NEED TO TRANSCRIBE THAT AUDIO FOR YOU! (assuming you still need it.) I know I'm a jackass. Wednesday I have off from both jobs, so I will get it done then. promise! :D)
- "Ulysses", Franz Ferdinand's new single. SO FUCKING BOUNCY. and ... yanno. Ulysses.
- my foods for today, delicious
based on Allison's Southern Vegan Mac and Cheese recipe here, and originally posted (by me) this evening on
faded_bento_box (which community is ALSO one of my happymaking things!)
3-4 cups assorted root vegetables, matchstick-cut (I used rutabaga, carrots, celery root, and kohlrabi. you can pretty much pick any root veg you want, but DO NOT MISS THE AMAZINGNESS OF RUTABAGA WITH THIS SAUCE. nngh. (p.s. i might love rutabaga a little too much for my own good))
1-2 leeks (white and light green parts only, please!) cut into 1/4-inch half-moons
olive oil, canola oil, or other cooking oil (smoke point isn't too important here)
sea salt and fresh ground pepper to taste
1 tablespoon plus 1 teaspoon brown rice flour
1/2 teaspoon chipotle powder
1 1/2 teaspoons mustard powder
2 1/2 cups unsweetened soy milk
1 block (10 oz.) vegan cheddar cheese, grated (I like Follow Your Heart "Vegan Gourmet", but whatever works for you)
2 tablespoons nutritional yeast
1 teaspoon horseradish
heat oil in large skillet or medium saucepan; add root veg, leeks, and salt and pepper; saute until the leeks soften and the roots begin to get tender. add flour, chipotle powder, mustard powder; stir to coat/incorporate. pour soy milk into the pan and heat to a boil, stirring occasionally. add cheese, horseradish, and nutritional yeast. heat, stirring regularly, until everything's thoroughly combined and melty-smooth (about 5-10 minutes).
pour it all into a baking dish and throw it in the oven at 325 for 15-20 minutes, until bubbly and brown (vegan cheese won't brown quite like dairy, but it will brown a little :D) and fantastic.
cool a little, dish up, and NOM!

no, I'm not expecting the world to change. I'm just relieved to have the opportunity to hope that together we can all work to make it that much brighter. :D
