Makes: 1 pie.
1 hour 10 minutes (10 mins prep)
CRUMB TOPPING
2 cups flour
2/3 cup brown sugar
1/2 cup shortening
FILLING
1/2 teaspoon baking soda
1/3 cup boiling water
2/3 cup cold water
1 cup molasses
1 cup brown sugar
1 egg, beaten
1 (9 inch) unbaked pie shells
Preheat oven to 350 degrees.
In a medium bowl combine (2 cups) flour and (2/3 cup) brown sugar.
Cut (1/2 cup) shortening into flour mixture until crumbly.
Dissolve baking soda into (1/3 cup) boiling water.
Add (2/3 cup) cold water.
In a small bowl stir the beaten egg into the (1 cup) brown sugar.
Add the (1 cup) molasses to the egg/brown sugar mixture.
Add baking-soda-water to the molasses mixture.
Pour into 9 inch unbaked pie shell.
Sprinkle crumb mixture over filling.
Place pie on top of a baking sheet in case of spill overs, and bake at 350 degrees for 10 minutes. Reduce oven to 325 degrees for 50 minutes longer or until done in center.
